80% whole bunch macerated, with the remainder destemmed. Cool long ferments for gentle extraction and 9 months maturation in mature French oak barriques and hogsheads on fine lees. Bottled unfined and unfiltered

This is quite down the line, though. Sure, a little fresher and tarter than most, but bolstered with autumnal leaf characters, truffle, green olive, sweet spices and we’ve a few classic lines running in the skewwhiff. Lithe tannins suck the wine in nicely to a good shape, acidity is bell ring clear and lightly briny. This has all the merit of fine wine tucked into a more energetic and easy drinking frame.
