The Vintage
The 2020/21 season was a pleasure, the second cool season in a row. Great spring rain, enough sunshine and warmth for decent fruitset and crops followed by a mild summer with good rainfall throughout. The wines reflect this in their purity of fruit and balance of freshness and complexity.
Winemaking
Hand harvested, a small portion crushed with the remaining whole-bunches placed on top for a 12 day maceration. Pressed to 300L oak casks for the completion of ferments and maturation. It was blended in early summer and bottled early in 2022. As with all our zero-added SO2 wines there was a period of bottle maturation prior to release. This is an important component of our zero-SO2 winemaking process.

Total sulphur dioxide – 13mg/L (all naturally occurring)
Residual sugar – 0.07g/L
Volatile acidity – 0.50g/L
