Bobar 2019 Savant

$52.00

A charismatic and beautifully composed wine that seduces you with its earthy charms and light touch.

The aroma is neatly balanced between aromatic red fruits, earthy depth and leafy notes. Fleshy Satsuma plum and bright ripe raspberries, tea leaves and twigs, and a dark forest floor element.

The palate exhibits calmness and strength – soft fleshy fruits fill the mid-palate, dried plum and tea leaf characters mingle, anchored by fine and savoury tannins.

Description

This tiny parcel of Cabernet Sauvignon is on the Nenagh Park vineyard 100m metres to the south of the Bobar Chardonnay vines, planted in the late 1980’s. It faces east, tucked hard into the base of the Christmas Hills, protected and hidden – it has a ‘Garden of Eden’ sense about it. The wines from this parcel have an ease, balance and poise, never forced, never stressed, the mature vines deliver depth and intensity without weight or effort.

Picked directly to small open fermenters in the vineyard, a small amount of the crop was crushed on the bottom of the fermenter by foot and the rest placed as whole bunches on top and left for 10 days of carbonic maceration. It was then entirely crushed by foot and macerated for a further 24 hours before pressing to 225L old French oak barriques. Allowed to mature throughout the Winter, it was racked and bottled in October 2019 with no addition of sulphur dioxide.

The 2019 vintage

The 2018/19 season started with a mild Spring, regular rain and fabulous balanced vine growth. From mid-December Summer began in earnest with several hot spells punctuating a dry lead to harvest and mild weather in between. The weather moderated in the final couple of weeks before harvest allowing for a gentle and slow ripening in the final stages. The wines have a beautiful richness and density of flavour counterpointed with a genuine restraint.
