Bobar 2019 Cabaret

Bright clear red, the 2019 Cabaret has incredible energy and focus.

Such a delicate and filigreed fragrance. Detailed red fruits, pomegranate blossom, red currant, cranberry, currant leaf and raspberry.

The palate is bright, brisk and sapid. The sweet and piquant fruits soar, underpinned by a gentle brush of tannin and fresh acidity. Great length and a precise definition of character.

An inadvertent field blend of approximately 80% Cabernet Sauvignon and 20% Petit Verdot all mixed together at planting time in 1998 on the Homestead Vineyard. Laying just below the steep Christmas Hills range to the west of Yarra Glen, the expansive easterly aspect and protection of the hills to the west allow the wines to be expressive and full flavoured but with a restraint and subtlety that other areas of the Yarra Valley floor don’t afford.

The crop was hand harvested and placed directly into small open fermenters in the vineyard with only a tiny proportion of the crop crushed by foot on the base of the fermenter, then covered and left for a 14 day maceration before pressing to old 300L oak hogsheads. Allowed to mature throughout the Winter, it was racked and bottled in October 2019 with no addition of sulphur dioxide.

Alcohol – 13%
Titratable acidity – 6.7g/L

Total sulphur dioxide – 13mg/L
Residual sugar – 0.05g/L
Volatile acidity – 0.91g/L

The 2019 vintage

The 2018/19 season started with a mild Spring, regular rain and fabulous balanced vine growth. From mid-December Summer began in earnest with several hot spells punctuating a dry lead to harvest and mild weather in between. The weather moderated in the final couple of weeks before harvest allowing for a gentle and slow ripening in the final stages. The wines have a beautiful richness and density of flavour counterpointed with a genuine restraint.
